We will need:

  • Tomatoes – 8 pcs;
  • Eggplants – 400 g;
  • Onion – 3 pcs;
  • Garlic – 4 cloves;
  • Vegetable oil – 60 g;
  • Ground crackers - 1 tbsp. spoon;
  • Salt and pepper - to taste.

Let's prepare it like this:

Wash the tomatoes, cut off the tops and scoop out some of the pulp. Cut the eggplants into small cubes, sprinkle with salt and leave for half an hour, then rinse and dry. Fry the eggplants in oil, add finely chopped onion, tomato pulp, crushed garlic, salt and pepper. Fill the tomatoes with this minced meat, sprinkle with ground breadcrumbs, sprinkle with vegetable oil and bake in the oven until cooked.

Baked tomatoes stuffed with cheese.

We will need:

  • Tomatoes – 8 pcs;
  • Fat cheese – 250 g;
  • Cream – 0.5 cups;
  • Yolks – 2 pcs;
  • Salt, pepper, cumin - to taste.

Let's prepare it like this:

Prepare minced meat from grated cheese, yolks and cream. Grind it well and fill it with halves of tomatoes, from which the core has previously been removed with a spoon. Place the stuffed tomatoes on a greased baking sheet or frying pan. Bake in a well-heated oven for 15 minutes. Ready tomatoes can be topped with sour cream or cream. Can be served both hot and cold.

When it all boils, pour the hot juice into sterilized jars. You need to sterilize jars: half-liter jars - 8-10 minutes, liter jars - 10-12 minutes, three-liter jars - 30-40 minutes.

We prepare tomato paste and puree from the pulp remaining in the pan. To do this, it is boiled 2-2.5 times for puree, and 5-7 times for pasta. It takes 30-40 minutes to sterilize the paste or puree.

You can save pasta and puree without sterilization; to do this, for every kilogram of finished pasta or puree you need to add 3 tbsp. spoons of salt, boil, pour into jars and pour hot vegetable oil on top, cover with a lid and tie tightly.

Dressing for borscht.

Take equal parts of tomatoes and red sweet peppers, wash them and pass them through a meat grinder, add salt to taste. Bring to a boil and cook for no more than 1-2 minutes. Remove from heat and immediately place in prepared small glass jars and cover with plastic lids. This seasoning can be stored in a cool place all winter. It can be added to borscht together with or instead of tomato paste. It all depends on your taste.

This is an interesting and not quite ordinary recipe and I am 99% sure that if you love it, then after trying to cook this dish once, you will forever add it to your collection of delicious homemade snacks.

This dish is somewhat reminiscent of marinated vegetables, but it turns out fresher, contains absolutely no vinegar, and retains all the vitamins.

In addition, onions are very useful!

The appetizer is moderately salty, moderately spicy, moderately spicy, and very tasty!

The only negative is that it takes two days to prepare.

Delicious tomato and onion appetizer

To prepare this recipe you need to take:

  • 6-8 pieces of ripe firm tomatoes, ideally plum-shaped.
  • 1 large onion
  • 4 tbsp. spoons of olive oil
  • 1 tablespoon
  • 2 sprigs rosemary
  • 2 cloves garlic
  • 2 tbsp. spoons of dried basil
  • 2 tbsp lemon juice
  • a pinch of red hot pepper

Tomatoes and onions will give juice, which will be mixed with the dressing and the amount of marinade will increase several times.
Cover everything tightly with a lid and put it in the refrigerator for at least two days. But if it sits longer, it will taste even better!

In two days you will receive an unusual and very aromatic appetizer made from tomatoes and onions!!! The tomatoes will be soaked in the marinade and acquire an amazing taste, and the onions will become soft and piquant.

An hour before eating, remove the snack from the refrigerator to warm it up to room temperature.

For those who don’t like garlic, you can try preparing the same appetizer without them by adding more honey and 2 tablespoons of dill seeds and more herbs to the marinade.
