Wash the zucchini, peel if necessary, and grate on a medium grater. Lightly salt the zucchini and leave for 5-10 minutes to let the juice, then squeeze. This procedure is necessary so that the stuffing is not too liquid. Combine the squeezed zucchini with the chopped fillet.

Peel the onion and grate on a fine grater. Put the onion to the minced meat.

Peel and crush the garlic with a press.

Add eggs to mince.

Then add flour or bread. If you add bread, then it must first be soaked in milk, and squeezed well before adding to the minced meat. I just had a couple of pieces of stale loaf left, and I used it.

Add salt, pepper, spices and mix everything well with a spoon. If the dough is liquid, then add more flour or bread.

Heat a little odorless vegetable oil in a frying pan and put the cutlets with a spoon.

Fry the cutlets over medium heat until golden brown, first on one side, then on the other. Each side will take 7-8 minutes. Do not rush to turn the patties until they are browned, otherwise they may fall apart.

After frying, put the cutlets on a paper towel to get rid of excess fat.

Chicken cutlets with zucchini are ready, serve them hot with a side dish of your choice. In my opinion, the best side dish for such cutlets would be mashed potatoes or fresh vegetable salad.

Chicken fillet - the so-called white meat, may seem dry to many. Therefore, chicken cutlets with zucchini prepared from it are much juicier and healthier for children and adults.

Delicate miniature cutlets with a golden crust are suitable for breakfast, but they will not overload the stomach when served for dinner. The dish goes well with stewed vegetables and crumbly cereals, but in this case it will require gravy or additions in the form of fresh sour vegetables, even if the proportion of zucchini is large enough.

Garlic-free cutlets are an excellent opportunity to have a snack at the service at lunchtime.

  • 400 g chicken meat
  • 200 g zucchini
  • 1 chicken egg
  • 2 slices of white bread
  • 1 bulb
  • 1 tsp salt
  • ground pepper
  • spices to taste

Cooking

1. Take chicken meat, for example, fillet. Let's wash it well.

2. Cut the fillet into medium pieces and put them in the combine bowl. We clean the turnip, wash it and also put it in the combine. Of course, for the preparation of minced meat, you can use a meat grinder.

3. Grind the meat with onions into minced meat, then wash the zucchini and cut it into circles, put it in a food processor. We press the "Start" button and wait until the zucchini is crushed, there should be no whole pieces left.

4. Soak white bread in water or even milk, then partially squeeze out the water.

5. Put the bread crumb into the bowl of the combine, pour in the chicken egg. It is better to break it over other dishes, as it is sometimes difficult to predict whether the egg is spoiled or not. We also add salt, ground pepper, spices for cutlets or for chicken. Mix everything for the last time in a food processor.

6. For greater convenience, we transfer the minced chicken with zucchini to another dish, it turns out to be quite thick.

7. Lubricate the heated pan with vegetable oil. If the pan has a non-stick coating, you can fry without oil at all. With a tablespoon, spread small portions of minced meat on a hot frying pan. Fry over medium heat for 4 minutes on one side.

8. Then turn over with a spatula to the other side and fry for another 3 minutes. During this time, the cutlets will reach readiness, but will not be overdried.

9. Remove chicken cutlets with zucchini from the pan, serve with a side dish, herbs, vegetables. Such cutlets are also suitable for a children's table.

Note to the owner

1. Delicate minced fillet does not interfere with supplementing with a small amount of chicken fat or using meat cut from legs - it optimally combines muscle tissue and poultry fat and makes the dish more nutritious. That is why frying in oil is more preferable - it allows you to melt the fat and convert it into an easily digestible form.

2. The taste of the cutlets will depend on the quality of the chicken meat, the amount and composition of the spices introduced, and the proportion of squash puree - the more it is, the juicier the cutlets will be. But one should not lose a sense of proportion, hoping that the egg white and bread crumb will still bind the minced meat well: the hostess should focus on the consistency of the finished cutlet mass - the cutlets should be molded at least with a wet spoon.

3. A suitable breading will also help to securely hold valuable meat and squash juices. For this purpose, you can use semolina, crushed crackers, oatmeal or undeservedly set aside cornmeal - it will give the cutlets a delicate golden and very appetizing hue.

4. The classic recipe for cutlets is unthinkable without garlic. But for those who are unable to do without it, you need to remember about those around you and put it in moderation.
