When choosing a pan, you need to carefully examine its inside and outside. On their surface there should be no chips, scuffs, scratches. If a drawing is applied, it must be evenly dyed and not erased when touched. If the bottom of the pan is embossed, the pattern should be uniform, without clearly visible or falling fragments.

Additional elements, such as a lid and a handle, must also be of good quality, without cracks or inconsistencies in the seams. Dishes should not have an unpleasant odor.

Often low-quality goods are sold at promotions with tempting discounts. But dishes with a defect will not last long and are likely to cause damage to health.

When deciding to buy a frying pan and considering, for example, which ceramic frying pans are better or what is better to choose - a grill or a WOK, you need to weigh all the arguments. Well, if the opportunity allows, then you can replenish your rows of dishes with several frying recruits at once. The main thing is to choose dishes carefully and carefully.

Let's talk about frying pans, shall we? Like dishes and utensils, what can be special about it? However, of all the frying pans that I have had over ... many years, only one is still serving - my grandmother's cast-iron one. The rest in two or three years, if not earlier, go to the trash.

Specifically, I would like to find out which pan with a non-stick coating is better: it lasts longer, does not emit harmful substances, and does not require a reverent attitude?

Player 1 - Teflon Pans

Teflon is the very first and so far the most popular non-stick coating, and the most famous manufacturer of such pans is the French company Tefal, which first launched them on the market. Therefore, Teflon coating is often called Tefal.

But these are not the only names: you can find pans coated with:

  • steloflon, etc.

In fact, all this is the same substance: polytetrafluoroethylene (PTFE) or, in short and more pronounced, Teflon.

What you need to know about Teflon and cookware with such a coating

There are many conflicting opinions and opinions about Teflon, as well as concerns about its use. Some argue that these are the best frying pans, others complain about the fragility and rapid abrasion of the coating.

To understand where the truth is, you need to know how to choose them correctly and what not to do when using:

  1. Firstly, the maximum service life of such dishes, declared by the manufacturers, is 5 years. And this is at proper care and careful use. Therefore, do not expect a miracle.

  1. Secondly, Teflon does not tolerate heating above 230 degrees, so it is recommended to use frying pans with such a coating only on gas stoves, the heating temperature of which is lower than that of electric ones.
    When overheated, the coating cracks, and particles of Teflon lagging behind the walls that get into food will not add health. Although they do no harm, this is a common myth. PTFE, absolutely neutral to acids and alkalis, is excreted from the body unchanged.

  1. Thirdly, the instruction for any Teflon forbids eating directly from it, using ordinary cutlery, as they instantly scratch the surface. For the same reason, you can not use metal spatulas when cooking - only wooden, silicone or polymer ones.

Of course, all this is about high-quality Teflon. If you take into account all the recommendations of the manufacturer, he will work out his time. And the fake will show itself almost immediately, despite all the precautions.

But not only the quality of the coating is important, but also the pan itself, its basis. If it is made of thin extruded aluminum, then its bottom will deform when heated, which does not contribute to the integrity of the Teflon film.

The bottom should be thick, at least 5 mm. It is even better if the walls have such a thickness.

Despite some embellishment of reality, such a coating actually has greater strength and resistance to mechanical damage than conventional PTFE. And "marble" dishes heat up faster and keep heat longer.

The cost is almost three thousand. But both appearance and long term services justify it. There are much more expensive...

And again a similar picture: there is no pure titanium coating, this element is built into the structural lattice of PTFE, improving its properties. Or the pan itself is made of an alloy or aluminum with titanium.

According to their properties, products made of this metal are similar to cast iron: they hold heat well, do not oxidize, do not deform. Plus they don't rust. But they cost more.

Titanium pans have the following pros and cons:

  • Very high damage and wear resistance. The highest among all "non-stick". So high that it allows the use of metal accessories when cooking.

  • However, eating from such a pan with a fork and knife is still not worth it. How to clean it wire brush or abrasives. This can be attributed to the disadvantages;

I've had no luck with pans like this. As it turned out - due to lack of information. Rather, due to the fact that she was simply too lazy to study the subject of purchase.

Firstly, I took what was cheaper, and such dishes could well turn out to be a fake with an enamel coating. And secondly, I washed them in the dishwasher, which is very undesirable.

Advantages and disadvantages

Ceramics is a priori safe natural material, consisting of clay, sand and other natural components. When heated, it does not emit harmful substances, of course, if the manufacturer did not mix them there. Which is unlikely.

What are the other benefits of this coverage?

  • It, unlike Teflon, is not afraid of strong heat and can withstand temperatures up to 450 degrees;
  • The dishes heat up quickly and evenly;
  • The ceramic surface is more resistant to damage. Some manufacturers do not even warn us against using metal spatulas. But I still wouldn't risk it;
  • You can use quite a bit of oil for cooking. You can’t do without it at all, because we need food not to burn, and the concept of “non-stick” means that it will not stick to the surface, that’s all.

Now for the cons:

  • The pan is not afraid of strong heating, but a sharp change in temperature is very much so. That is why it should not be washed in PMM - only with your own hands. Also, do not put frozen food in a hot dish or rinse cold water, barely removed from the fire;
  • The coating, despite its strength, is rather fragile - if you drop the pan on a tiled floor or accidentally hit it with something hard and heavy, chips may appear;
  • Since such dishes are usually covered with ceramics on all sides, they lose their magnetic properties, and therefore cannot be used on induction cookers. Although, given this feature, manufacturers often leave the bottom uncoated.

From myself I want to advise: do not buy pans with a light coating. Meat juice, flour, oil during heat treatment leave too obvious dark marks on it, which one is drawn to rub off with something abrasive, if it is not immediately possible to do this with mild means. The result is obvious.
