You can start the rotation from the central gear, which will begin to move the neighbors on both sides. Another option is to turn one of the extreme ones, it transmits the moment adjacent to it, etc. This mechanism makes the skewers rotate in one direction, so that the strung meat will not cling. The juice is also distributed more evenly, falling on neighboring pieces, making their surface more juicy.

When rotating in different directions, the friction force of the skewers against each other increases, which is why they can even fall out of the nests, i.e. the presence of a person will be useful. The gears are installed strictly perpendicular, even a slight misalignment can jam the mechanism.

Experienced cooks have noticed that the meat should receive the main portion of heat in the initial 2-3 minutes of cooking. To achieve this, it is desirable to heat it manually - first on one side, then on the other. As a result, a crust is formed that will not allow the juice to flow out. It is important to choose the right section of the spit. If it is round, frying boneless meat can be a problem, even with extra teeth. A flat skewer will most likely not be strong enough and will sag under the weight of the carcass. Perfect option- triangular or square section, the meat will not turn and slide off.

Be sure to weld at least one pair of prongs on the skewer to hold the meat and a long, curved handle to rotate it. It is convenient if any position of rotation on the brazier can be fixed.

In the field, in a forest or field, it is quite possible to fry the carcass of a small animal using a wooden skewer. It is better to use fresh alder, walnut or maple wood, they have the necessary strength and do not burn so quickly.

To do this, you need to pick up a strong, even branch, with several forks, and clean it from the bark. One of the forks will become a handle for rotation, the next - teeth to hold the meat. The end of the branch must be well sharpened so that the carcass is easily strung on it. On the other hand, it is convenient if the end of the skewer is slightly bent or has a different method of fastening so as not to fly out of the support.
